Peas are are a legume and grow in a moist cool climate and are at their best in early spring and summer. There are two types of peas, the wrinkled seeded and the smooth seeded.The wrinkled peas are said to be sweeter than the smooth seeded that are hardier. It is the smooth pea that is dried and used for soups.

Peas are usually grown in temperate regions in Australia and are best planted that are cool and moist. Australia is currently producing an estimated 400,000 tonnes of peas with four different varieties such as Blue, Dun, Maple and White peas.

Peas contain dietary proteins, vitamin C, energy, thiamine, niacin and zinc.

They can be snap frozen and will keep for three to four days in your refrigerator.
