Kale is a very nutritious vegetable with large green leaves. It is actually a very primitive cabbage and has the wonderful property of regenerating its leaves after about 3 weeks. Scots Kale is the one that we are most familiar with but there are other varieties. It likes the cool weather and gets more bitter and tougher in the hot weather but can still be eaten and does not loose its nutritional value.
Kale helps to lower cholesterol level.
Kale has a detoxifying ingredient.
Kale is rich in Antioxidants.
Has vitamin A, vitamin C, vitamin K and calcium.
It also has minerals such as copper, potassium, iron, and manganese.
In Australia Kale is at its freshest in July and August.
